On the night of April 11, 2025, a reunion with a former colleague took place near Imhak Station(임학역). Walking through the small alleyway between exits 3 and 4, the choice for dinner naturally leaned toward Sogopchang(소곱창), leading the way to Ujangchangchang Incheon Gyeyang Branch(우장창창 인천계양점).

The basic table setting was surprisingly generous. It featured Buchu-muchim(부추무침)Myeongi-namul(명이나물), and fresh Gan(간) and Cheon-yeop(천엽). A unique start to the meal was the Ramyeon(라면) served in a pot, which had a refreshing flavor similar to Mu-guk(무국).

The fresh Gan(간) and Cheon-yeop(천엽) were of excellent quality, making them the perfect accompaniment for a drink even before the main dish arrived.

The main Sogopchang(소곱창) sizzled on the grill, accompanied by potatoes, onions, and Tteok(떡). The tripe was packed with richness, and the fatty flavor combined with the savory aroma created a perfect harmony with the long conversation.

The meal concluded with Bokkeumbap(볶음밥). The rice, infused with the flavorful oil from the Sogopchang(소곱창), offered a smoky and spicy taste that kept me reaching for the last spoonful.
