A Bittersweet Gopchang Night in Janggi-dong: Lee Daegam Gopchang Makchang Review
A review of Lee Daegam Gopchang Makchang(이대감곱창막창) in Janggi-dong(장기동). Chosen for its Seonji-guk(선지국), though the absence of Saeng-gan(생간) and Cheon-yeop(천엽) left a notable disappointment.
1. What Gop-chang Is
Gop-chang(곱창) refers to grilled beef intestines, typically cooked over a tabletop grill and eaten with dipping sauces and simple sides. The appeal comes from the contrast in texture—crisped edges, a chewy bite, and rendered fat that carries smoke and seasoning. Because the ingredients are straightforward, the overall experience often depends on small details: freshness, side offerings, and how consistently the kitchen manages the grill.
2. Strict Criteria for Selecting a Restaurant
My primary condition for choosing a Gop-chang restaurant is whether it serves Saeng-gan(생간) and Cheon-yeop(천엽). From ten candidates across Gurae-dong and Janggi-dong, only five met that baseline. Among them, Lee Daegam Gopchang Makchang and Gopchang-kkiri were narrowed down as the final two based on personal standards.

3. Deciding Factor: The Hearty Seonji-guk
For this visit, I chose Lee Daegam Gopchang Makchang because it serves Seonji-guk(선지국) as a complimentary side dish. Having a warm, savory soup alongside grilled intestines mattered more than expected, and it became the final deciding factor.

4. A Disappointing Absence of Essential Sides
The basic table setting included dipping sauces, Mul-kimchi(물김치), and Bu-chu-muchim(부추무침). However, Saeng-gan(생간) and Cheon-yeop(천엽)—the two items that mattered most to me—were missing from the start. When I asked, the staff initially responded vaguely and then said they were out of stock. That gap was difficult to overlook, because I value these items even more than Gop-chang itself.

Basic sides including dipping sauces, Mul-kimchi(물김치), and Bu-chu-muchim(부추무침).
5. Main Course: Sogopchang and Somakchang
The order was one portion each of Sogopchang(소곱창) and Somakchang(소막창). The Sogopchang stood out for having garlic tucked inside, which added a steady depth as it cooked. Grilled beef heart was also served, likely as a complimentary item. The meal, along with three bottles of Soju(소주), was decent overall—but the absence of my primary criteria left a lingering disappointment.

6. Closing
Overall, the grill itself was decent, and the complimentary Seonji-guk(선지국) added warmth to the meal. However, my disappointment was significant because Saeng-gan(생간) and Cheon-yeop(천엽) were not available, and those items are my primary criteria for choosing a Gop-chang restaurant. For that reason, I do not expect to return.
